Makhana Project — Hill Country Heat Popped Water Lily Seeds
Texas Heat. Lemon Brightness. Ancient Crunch.
Our Hill Country Heat makhana is a love letter to the Texas landscape. We take foxnuts sourced from the lily ponds of Bihar, India — the ancestral home of 85% of the world's popped water lily seeds — and finish them in small batches in Austin with ingredients grown right in our backyard.
Each batch is coated in Texas Hill Country Olive Co. Jalapeño Infused Olive Oil — bright, grassy, and warmly spiced — then seasoned with Origin Ranch's 3-Lemon Salt, a stunning blend of lemon balm, lemon verbena, and lemongrass grown at the ranch. The result is a flavor that builds: first the citrusy herb lift, then the slow, satisfying heat of jalapeño.
Bold enough to stand on its own. Light enough to keep reaching for more.
